This summer during my stay I had the pleasure to meet up with another food blogger I had been talking to online for a while: <a href=\"http:\/\/foodblogga.blogspot.com\/\"><strong>Susan from Food Blogga<\/strong><\/a>.<\/p>\n<p>We had a long chat and I like to think the only thing that kept us from talking more was the fact I had a flight waiting for me. She&#8217;s really a wonderful person &#8211; I hope to meet up with you again soon, Susan!<\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" class=\"right\" src=\"https:\/\/i0.wp.com\/4.bp.blogspot.com\/_hNUzNNaIAAw\/SR9dbY9F1NI\/AAAAAAAAFjM\/z2f94EKSGfw\/s200\/Food%2BBlogga%2BCookie%2BLogo.JPEG\" alt=\"\" align=\"right\" \/>So I&#8217;m sending these Pignoli cookies to Susan at Food Blogga for her <a href=\"http:\/\/foodblogga.blogspot.com\/2008\/11\/announcing-eat-christmas-cookies-season.html\"><strong>Eat Christmas Cookies Season 2<\/strong>!<\/a> Last year <a href=\"http:\/\/foodblogga.blogspot.com\/2007\/11\/christmas-cookies-from-around-world.html\">more than 200 cookie recipes were submitted<\/a> (and I participated with Sicilian Pistachio Cookies). Get inspired, and then make your own and submit it to Susan before the 21st! Keep an eye on <strong><a href=\"http:\/\/foodblogga.blogspot.com\/2008\/11\/eat-christmas-cookies-season-2.html\">Season 2&#8217;s round-up page<\/a><\/strong> for the new cookies submitted!<\/p>\n<p>I&#8217;d like to think if we were both in San Diego, I&#8217;d be bringing these Pignoli Cookies to her to try in person! It&#8217;ll make a great gift for someone or it can be a great way to organize your own <strong>Holiday Cookie Swap<\/strong>!<\/p>\n<p style=\"text-align: center;\"><a title=\"Pignoli (Almond and Pine Nut) Cookies from Field Guide to Cookies by MsAdventuresinItaly, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/msadventuresinitaly\/3078658841\/\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/i0.wp.com\/farm4.static.flickr.com\/3182\/3078658841_8a6305a7fe.jpg?resize=500%2C333\" alt=\"Pignoli (Almond and Pine Nut) Cookies from Field Guide to Cookies\" width=\"500\" height=\"333\" \/><\/a><\/p>\n<h3>Pignoli (Almond and Pine Nut) Cookies<\/h3>\n<p><em>Reprinted with permission from Field Guide for Cookies by Anita Chu- about 2 dozen cookies<br \/>\n<strong>Note<\/strong>: It is recommended not to use marzipan (sugared almond paste) but if you do (like I did) you&#8217;ll have to adjust the flour and sugar levels so they&#8217;re not too sweet. I recommend following the original recipe if you&#8217;re not comfortable experimenting (below)! <\/em><\/p>\n<p>1\/2 cup sugar<br \/>\n1\/2 cup confectioner&#8217;s sugar<br \/>\n1\/4 cup all-purpose flour<br \/>\n1\/8 teaspoon salt<br \/>\n3\/4 cup (8 oz) almond paste at room temperature<br \/>\n2 egg whites, whisked well<br \/>\n1\/2 cup pine nuts (pignoli or pinoli in Italian)<\/p>\n<ol>\n<li>Sift sugars, flour and salt into a medium bowl and set aside.<\/li>\n<li>In a (stand) mixer, beat the almond paste on low speed until it is broken up into pea-size pieces. Add half of the egg whites and continue mixing on low speed.<\/li>\n<li>Add the flour mixture and mix until smooth and well combined. Add the remaining egg whitesand continue seeking on low speed until well combined.<\/li>\n<li>Cover dough and refrigerate for 1 hour. Preheat the oven to 300F (about 150C).<\/li>\n<li>Line cookie sheets with parchment paper (preferred) or use silicone bakign mats. Drop teaspoons of dough on sheet about 2 inches apart. Sprinkle the cookies with the pine nuts.<\/li>\n<li>Bake 18 minutes or until light golden brown, rotating the sheet halfway through the cooking time.
